Olympics + Baking = The Perfect Combination!

Hello Darlings! 
Fall is starting to creep in and August is such a whirl-wind of a month!
For some of us, school is starting back (teachers and students) and for others it is just another month of the year. But for some reason, atlas for me, fall seems to be when things pick up in life!  And I don't hate it! 
ALSO, that means football season is right around the corner and OMG I CANT WAIT! (But I'll save that for another blog! hehe (: )
Speaking of sports and August... I'm sure all of you know what makes this month super special...
HINT: It only happens every four years!
 
The Olympics!
I am such a sucker for the Olympics.
I mean, I feel like even if you aren't really into sports, you can get into the Olympics.
It is more than just about the sports, it is about the athletes, and the stories and representing your country.
It truly is the only time that the whole world actually comes together for an event and it is pretty amazing.
History is always made at the Olympics and emotions are always on high!
And what a time to be alive! 
We are able to witness the most decorated Olympian of all time (Michael Phelps) AND the greatest gymnast of all time (Simone Biles)! 
That is pretty freaking cool, if you ask me!
It is funny because if watching the Olympics doesn't make you want to work out, then I don't know what will...
BUT - As I sit on the couch EVERY night watching the games, I am doing the exact opposite. OOPS!
And to make it worse, watching the games has led me to start baking... So I have something to snack on while I watch the best athletes in the world DUH! 
I thought I would share with y'all some of my favorite baking recipes, because they are perfect for fall, for the Olympics and even for football games. And I'm sure your significant other would appreciate them as well.

First I want to share this awesome, EASY recipe that I made the other day.
I just found what I had in the house because I was craving cookies... 
Y'all these are LIFE changing. 
PEANUT BUTTER CHOCOLATE CHIP COOKIES
INGREDIENTS:
1 1/2 cups  all-purpose flour
1 teaspoon  baking soda
1 cup (2 sticks)  butter or margarine, softened
1/2 cup  creamy or chunky peanut butter
1/2 cup  granulated sugar
1/2 cup  packed brown sugar
1 teaspoon  vanilla extract
1 large  egg
1 3/4 cups (11.5-oz. pkg.)  chocolate chip morsels (I used dark chocolate!)
Granulated sugar
DIRECTIONS:
PREHEAT oven to 375° F. 

COMBINE flour and baking soda in small bowl. Beat butter, peanut butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Beat in egg. Gradually beat in flour mixture. Stir in morsels.

DROP dough by rounded tablespoon onto ungreased baking sheets. Press down slightly with bottom of glass dipped in granulated sugar.

BAKE for 8 to 10 minutes or until edges are set but centers are still soft. Cool on baking sheets for 4 minutes; remove to wire racks to cool completely.
I am telling you, these might be the BEST homemade cookies I have ever baked.
And they didn't take long at all.
My mouth is not watering just thinking about it.

This next recipe is a dessert that I grew up making with my friends.
It is so easy - and if you have kids, or are babysitting, this is the perfect way to get them involved!
OREO COOKIE BALLS 

 

INGREDIENTS:

1 pkg. (8 oz.) brick cream cheese, softened

36 OREO Cookies, finely crushed

4 pkg. (4 oz. each) white baking chocolate, melted

DIRECTIONS:
MIX  cream cheese and cookie crumbs until blended.
SHAPE  into 48 (1-inch) balls. Freeze 10 min. Dip balls in melted chocolate; place in single layer in shallow waxed paper-lined pan.
REFRIGERATE  1 hour or until firm.
Seriously so easy... and so ADDICTING!
Before you know it you will have eaten like 20 of them! 
These are especially good for a tailgate party!

Ok, my third recipe isn't really a recipe.
And unfortunately I don't have a picture.
But this is one of my secrets. 
Especially for those of us who are trying to cut back on the calories just a little...
But you also want you cake and EAT it too! :)
So, go to the store... grab your favorite chocolate cake mix and a diet coke.
Yep, just those two ingredients.
Go home, mix just the cake mix and the diet coke and pour in a pan and bake as long as it says on the box.
But let me back track, DONT try the uncooked mix because it does not taste good.
When it is in the oven, magic happens, and when it comes out you will have the most delicious, moist cake EVER.
For like 1/3 of the calories! 
Y'all might think I am crazy, but don't knock it until you try it!
This will change you life all while satisfying your sweet tooth!
